A study of 93 international tourist hotels in Taiwan, tracking operations across nearly a decade, found the opposite of what that assumption would predict: in every model the researchers tested, food and beverage operations contributed more to overall hotel productivity than rooms operations did, and that gap widened rather than narrowed when the market came under pressure. It is one market over one period, so it is evidence rather than proof. But it points somewhere worth noticing. The part of the operation most often treated as secondary may be the part doing the most to set a property apart.
